This is because the smoking process, carried out at lower temperatures, allows the meat to retain valuable compounds and ingredients, such as Omega acids. When smoking at high temperatures, these valuable, polyunsaturated fatty acids unfortunately disappear from the product along with microorganisms and bacteria.
